Salted Dark Chocolate-covered Wafers

Makes six dozen cookies

1 ½ cup butter

2 cups sugar

4 eggs

2 tspn vanilla

5 cups all purpose flour

OR 5 cups brown rice flour plus 1 ½ tbspn xanthan gum

2 tspn baking powder

2 tspn salt

 

 

For chocolate coating

8 oz unsweetened bakerユs chocolate

3 oz semi-sweet bakerユs chocolate

1 tblspn butter

1 tspn kosher salt

kosher salt for sprinkling

Bake the wafers.

Mix butter, sugar, eggs, and vanilla. Blend in flour, baking powder, and salt. Add xanthan gum for the gluten-free version. Cover and chill at least one hour. Overnight is best.

Heat oven to 400シ. Roll dough paper-thin on parchment paper. Cut out desired shapes. It is easiest to cut the cookies on the paper you will be baking them on. Bake for 6 minutes or until they just start to brown.

Melt both types of chocolate and butter together on a double boiler. If you donユt have a double boiler, you can make an effective substitute using two differently sized saucepots. Add the salt. Keeping the chocolate on low heat, CAREFULLY touch about half of one side of a wafer in the chocolate. Or just dip it. Place the now-chocolated wafer on either parchment paper or aluminum foil. Sprinkle the salt over the chocolate while it is still soft. Cool wafers on their post-dipping sheet.

Store in an airtight container.
